Lets particularily focus on the guys seeking this from a girl, aspect. Describe every level of this philosophy, from just mental, emotional, and all the way into the metaphysical realms of possible theory.

The mental aspect is . . . the fact that they are untouched . . . they have no STDs . . . they’ve never had another man inside them.
The emotional aspect . . . you’re the first guy they’ve had sex with . . . good for the ego.

Actiually I’ve always been more attracted to the slutty women. Easier to get what I’m after (since they’re after the same) no strings attached after. Another bonus is that with the extra experience, (or perhaps it’s the enthusiasm) they’re better at it.
There is the aspect of competition as well since there are a lot of guys thinking the same way I am.

Your question doesn’t really fit in the ‘Philosophy’ section. Actually, I guess it does–more literary theory than philosophy. You will need to read Eroticism by Georges Bataille. I think he may provide a “philosophical” account of virgin seductiveness.
But, truthfully, I think your question belongs in psychology. The psychological scholars have several books on the the subject. Many of these books delve deeply into the subject from a “philosophical” stand-point, I guess. The psychological scholars seem to give a better account of the metaphysical reality in a lust relationship.
I believe that the mental and emotional aspects of this question ultimately fuse together, as the concept of virginity itself gives the man a sense of superiority and control over a sexual encounter (mental). He, the more learned of the two is able to “dominate” the virgin if you will, which reinforces his own masculinity (mental as well as emotional).
Who doesn’t love someone clean and pure and untainted? And it also tells you that the girl is smart and strong and worthy of your love. I don’t like easy ladies. They are boring. I like a challenge.
