Look in the business phone book under the religion section; there’s a lot of religious institutions in Vegas, including new age and alternative groups.
Also check out Craigslist. I’ve seen some meditation groups in the Activities section.
You might also check out some of the vegetarian cafes and markets to meet people and ask around to see what there is in the community.
