I’m trying to understand how one pulls the cards from the deck when doing a reading. I’ve just been fanning them out in front of me and then pulling an individual card and placing it in the spread..

I think you’re supposed to cut the deck into piles of however many cards you plan to draw, then taking the top card from each pile. That’s how I’ve done it anyway, and I think that was how it said in the directions that came with my deck.
So if you plan to draw three cards, make 3 piles, and pick the top one from each. And remember to flip them over from left to right, not up and down because orientation matters.
