Hi, For crystallization to occur there are a number of conditions which must be met. such as saturation of a solution, it must be a relatively high concentration, secondly the temperature of the solution is very important. the temperture must make the solution super saturated. ie one that has more solute in solution than the solvent can accommodate. this condition of super saturation can be accomplished by some of the solvent either evaporating or being withdrawn by some other process. hope that clarifies the picture.

I think most of them do in their own ways, and it is due to the structure of the inner works of the molecule. I mean different molecules are structured in such a way that to be purely that certain molecule it has to stay in that very specific structure. For instance, you know what a polar and non polar molecule right. That is the reason why. Second course in Chemistry in college will make a lot of sense of this question you just asked. Good enough, yes?
