Constant temperature is very essential in growing crystals. Dark places have basically a constant temperature due to the absences of light. This is the main reason why crystals grow better in the dark.
Convection is also the enemy of someone who’s growing crystals. Since light is absent in dark places, heat is constant therefore very little or no convection take place in dark areas. Thus, crystallization is at its best.
